I am a certified Healing Herbal Cuisine (also known as “Slow Yakuzen”) instructor for international visitors.
Yakuzen is a traditional Japanese approach to cooking that uses seasonal ingredients to support health and beauty. In Eastern philosophy, it is believed that food has the power to regulate our physical condition. Every ingredient-vegetables, fruits, and even everyday pantry items-has medicinal properties that help balance the body and restore vitality.
My concept of “Slow Yakuzen” brings these principles into everyday life, using familiar, easy-to-find ingredients. I have authored 12 books on the subject and have been featured on television and in various media. “Yuru Yakuzen,” or gentle, accessible Yakuzen, is beginner-friendly and has gained popularity among people from all over the world.
An essential element of Slow Yakuzen is dashi, the traditional Japanese soup stock made from ingredients such as bonito flakes, kombu (kelp), dried shiitake mushrooms, and small dried sardines. Dashi not only adds deep umami flavor but also provides important nutrients that support overall wellness.
